Food safety in catering training course (HABC Level 2)
This course is for employees who handle food to learn the importance of food safety systems, techniques and the procedures involved. There is also a food safety refresher course for candidates who have taken the HABC or CIEH Level 2 Award in Food Safety in Catering within the last 3 to 5 years.
This course enables you to take personal responsibility for following food safety procedures, keep yourself clean and hygienic, receive and store food safely and prepare, cook and hot hold food safely.
Please specify at booking whether you require the catering or manufacturing qualification.
Course details
The course consists of the following:
- legislation
- food safety hazards
- temperature control
- refrigeration, chilling and cold holding
- cooking, hot holding and reheating
- food handling
- principles of safe food storage
- cleaning
- food premises and equipment
By the end of the course, employees who handle food will gain a firm grasp of the importance of food safety systems, techniques and the procedures involved, an appreciation of food safety hazards and the confidence and expertise to deliver food safely to customers.
Subject to passing a 20 question multiple choice exam paper delegates will gain the Highfield Awarding Body for Compliance Level 2 Award in Food Safety in Catering or Manufacturing. It is recommended that this qualification is refreshed every 3 years.
You will be given a HABC Food Safety in Catering manual to take away and keep after the course for future reference.
Duration
One day course, 9am to 4:30pm.
Equipment
No equipment is necessary for you to bring to the course. Pens and note paper will be available.
Refreshments
A sandwich lunch/salad with crisps and cake is provided as well as hot and cold drinks.
